Do your weekends drive your adrenaline up? My adrenaline runs so incredibly high on the weekends; not because I’m running and rushing, but because I’m building, painting, creating, and spending time searching for old items I can bring back to life. Yes, I work hard and am completely exhausted by the time Sunday evening rolls around, but I don’t see it that way. To me, it’s FUN! It’s EXHILERATING! It’s RELAXING!
This weekend was no different. I spent the weekend building some wood benches for a client. Later this week, I’ll post the tutorial on how to make these simple, yet sturdy benches. Yes… believe it or not to me that’s relaxing. That and two consecutive nights with 13 hours of sleep. It was a great weekend all around.
Feeling good makes me want want to eat well – something I’ve really been working on since January 1st. So today, I’m sharing a very healthy dinner recipe. It’s gluten-free, dairy-free, sugar-free, and full of healthy veggies.
This recipe was adapted from a few different stuffed pepper recipes I’ve tried in the past. I call it Lazy Stuffed Peppers because it has all of the same ingredients, but instead of having to stuff each individual pepper, it’s a one-pot meal.
- 1 lb. 93% lean ground beef
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 head cauliflower, riced*
- 1 green bell pepper, diced
- 2 red bell peppers, diced
- 1 can organic diced tomatoes (with basil)
- 1 tbsp. dried parsley or 1/4 cup fresh
- 1 tbsp. dried oregano
- 1/8 tsp. black pepper
- 1/8 tsp. red pepper flakes
- 1 8-oz. jar of tomato sauce (I prefer organic Prego with mushrooms)
In a large soup pot, cook the ground beef on medium heat until cooked through. Add the onion and garlic and cook until the onions soften a bit (about 2-3 min.).
To make *riced cauliflower, put cauliflower in a food processor and pulse 5-6 times until the cauliflower is the size of rice. Add the riced cauliflower, peppers, diced tomatoes, parsley, oregano, black pepper, and red pepper flakes to the ground beef and cook on medium heat for an additional 5 minutes. Add a jar of tomato sauce to the mixture. Simmer on low for 10 minutes.
