In my last post I told you how eating gluten-free or even a low gluten diet can help eliminate your seasonal allergies. Today, I’m sharing one of my favorite gluten-free dessert recipes… gluten-free, grain-free whoopie pies.
Chocolate Cake Ingredients:
1/4 cup unsalted butter or shortening
2 tbsp. coconut oil
1/2 cup coconut sugar
1/4 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
1 large egg
1-1/2 cups almond flour
1/4 tsp. baking soda
1/4 tsp. teaspoon Celtic sea salt
In a large mixing bowl, combine the butter/shortening, coconut oil, coconut sugar, vanilla extract, and egg. Mix then add cocoa powder. Add almond flour, baking soda, and sea salt. The mixture will be wet and sticky.
Place small dollops of the mixture on a cookie sheet. Bake 8-10 minutes at 350 degrees F.
Filling Ingredients:
2 egg whites
2 cups confectioners sugar
1 tsp vanilla
1/2 cup shortening
Beat egg whites until soft peaks form. Mix in confectioners sugar, vanilla, and shortening. Frost the whoopie pies and enjoy!
