Rice is a staple food that can round out a meal, but it can also get a little boring. We’re always looking for seasonings and sauces to bring a little flavor to basic rice. If you love lemon, here’s a super simple way to give plain white rice a little zing! This 3-ingredient recipe is right in the name… Lemon Parsley Rice.
My daughter loves Chipotle’s rice bowls. So earlier this week when we were cooking https://entriways.com/gluten-free-chicken-tenders/gluten-free chicken tenders (find that recipe HERE), she suggested we also make lime cilantro rice, just like Chipotle does.
Hmmm… lime cilantro. That sounds fresh, healthy and delicious! Let’s do it. But we didn’t have either the lime or cilantro so we substituted lemon and parsley. And it was just as delicious!
Ingredients
- 2 cups Basmati White Rice
- 1 Lemon
- Fresh Parsley
Directions
Place rice in a large saucepan. Cover with water so the water is about 2 inches above the rice. Bring to a boil, then turn the heat down to low and simmer until the water is fully absorbed.
Add to the cooked rice, the juice of 1 lemon and a small bunch of freshly chopped parsley.
