It’s not very often that everyone in my family agrees on a meal. Some prefer salad, some meat and potatoes, and some would eat pizza every day of the week if I let them. When I announce that we’re having General Tso’s Chicken, Rice & Broccoli, there’s a smile on everyone’s faces – especially mine since it’s simple to prepare.
INGREDIENTS:
- 3 boneless chicken breasts
- 2-cups of rice pilaf or brown rice
- broccoli
- 1 bottle of Iron Chef’s General Tso’s Sauce
- 1/4 tsp crushed red pepper
- 4 tbsp flour
- vegetable oil
DIRECTIONS:
Prepare the rice according to the package instructions and set aside.
Steam the broccoli until it’s bright green and set aside.
Slice chicken into bite-sized cubes and dredge them in flour.
Pour about 1/2-inch of vegetable oil into a large skillet and cook the chicken over medium until the chicken is cooked through and lightly browned.
Place the chicken in an oven-safe dish. Pour a full bottle of General Tso’s sauce over the chicken. Sprinkle on 1/4 tsp crushed red paper. Stir together. Cook in oven for 10 minutes on 350 degrees.
Serve the chicken over the broccoli & rice.
