Ooooh Yum! If you love lemon, you’ve got to try this Lemon Parmesan Chicken. It’s lemony, savory, sweet, gooey, and crispy all at the same time. Deliciousness on a plate with brussels sprouts and green beans.
I often come across recipes that I know my family will enjoy, but unfortunately I cannot due to the wheat. My solution… adapt the recipe to be gluten-free. That’s exactly what I did here by using rice cereal instead of breadcrumbs and arrowroot powder instead of flour made from wheat.
NOTE: I originally tried this recipe using Special K rice cereal, but then realized Original Special K rice cereal is NOT gluten-free. It’s made with wheat. So I have since changed this recipe to include Rice Crispies cereal.
Ingredients
- 6 thinly slicked boneless chicken breasts or 12 tenders
- 1/3 cup Arrowroot powder
- 5 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 3 lemons
- 1 cup Rice Crispies cereal
- 1/2 cup grated parmesan cheese
- 1 tbsp parsley
- 1/4 to 1/2 tsp garlic salt
- 1/4 tsp ground black pepper
- 3 lemons
- brussels sprouts and green beans (or asparagus)
- 1 tbsp olive oil
- 3 tbsp honey
Instructions
Preheat oven to 400 degrees F.
In a bowl, place the arrowroot powder in one bowl.
In a second bowl, combine melted butter, minced garlic, zest of 2 lemons, and juice of 2 lemons.
In a third bowl, crumble the rice cereal with your hands until very fine. Add the parmesan cheese, parsley, garlic salt, and pepper.
Coat the chicken in the arrowroot, then dredge it in the lemon-butter mixture, then press it into the rice cereal mixture to cover completely. Placed the chicken on a baking sheet pan lined with parchment paper. Drizzle remaining lemon-butter mixture on top of chicken pieces.
Bake chicken for 10 minutes. Flip chicken over and bake for another 10-12 minutes.
On a separate baking sheet pan, place brussels sprouts and green beans. Drizzle with a very small amount of olive oil (about 1 tsp). Bake at 400 degrees F for 10-15 minutes.
For the honey drizzle topping, whisk together the zest and juice of 1 lemon, 1 tbsp olive oil, and 3 tbsp honey. Just before serving the chicken, drizzle a small amount of the mixture on top of chicken.
Enjoy this lemon parmesan chicken, brussels sprouts, and green beans over prepared brown rice for a delicious gluten-free meal.
